Lean Meatloaf Recipe

Since I have mentioned before we have been eating more healthy and trying different things with our meals. Well one of our favorite family meals  to make is meatloaf but I needed to make a more healthy alternative for us to eat.

Some of the things that makes this recipe more lean is that I used ground turkey instead of ground beef and whole wheat bread instead of saltine crackers and white bread like I would usually use. These changes to a family favorite went over well and worked for our family.

Sugar Free Oatmeal Cookies Recipe

Usually I am not much of a healthy eater but recently we have had to make some changes so as a family we are going all out and trying to eat more healthy. All of us! So far it has been a crazy task to get tastes changed and not to want cupcakes and pizza. Well I have attempted my first healthy snack and made Sugar Free Oatmeal Cookies. And instead of sugar to give them flavor they had bananas which the kids and their dad loved.

This recipe is super easy and is great for those with diabetes as well. And while I am getting used to eating more healthy I thought the recipe was kind of plain however the kids and the one that they were for loved them. And I do think that the bananas and vanilla in them added a great taste.

Yes I feed my children chocolate muffins for breakfast

And they were good too…..

It was amusing though that my youngest insisted that chocolate muffins were not for breakfast. While he ate them of course. My oldest had no complaints and neither did I. The day before we had strawberry muffins and I think tomorrow it will be blueberry. We are totally on a muffin kick this week.  The odd thing was we had desert for breakfast and had breakfast for dinner.

Seriously though who doesn’t like muffins and would complain?

Oh my! Yummy Teriyaki Chicken

I will start by saying that this isn’t a full blown recipe, just me kind of telling what I did. Anyway I had it in my head that I wanted to have Chinese food for dinner one night this week. But I didn’t want to get take out (too much money) or get frozen. So I decided to make it at home. To start with I picked up a bottle of Teriyaki sauce and some crushed red peppers. Already sounds good right?

What I did was cut up 3 chicken breasts in pieces and marinated it over night in the Teriyaki sauce. Also when I would open the fridge I would turn the bag.  When I was ready to cook dinner I pre heated the oven to 350 degrees. And poured the chicken and Teriyaki sauce into a glass pan. After that was done I sprinkled the red pepper over the chicken and stirred it around and then cooked it in the oven for 45 minutes.

The blend of Teriyaki sauce and peppers was divine and definitely set off the taste of each other. I served it over rice and the kids adored it. My youngest didn’t even complain that the peppers were too spicy. So that was definitely a win.

Italian Crescent Casserole Recipe

I love it when I cook something and it is such a hit that I don’t have to worry about leftovers. It is sad though and a waste but leftovers tend to be forgotten about in our house and the dogs usually end up with a messy experiment or something tasty. They are dogs so they win either way. Well this recipe I made is very similar to the Pillsbury Italian Crescent Casserole Recipe but I changed the kind of sauce used but I am sure it is just as good either way.

This dish was just full of cheesy goodness and the basil leaves and crescent rolls added a really great crust. It also had the spaghetti sauce flavor the kids love without me having to make spaghetti. My kids love spaghetti and well making it every week is kind of blah!

Here is the recipe for you guys to try with my changes:

  • ¼ teaspoon dried basil leaves
Instructions
  1. In skillet, mix beef and pasta sauce. Heat to boiling over medium-high heat, stirring occasionally.

Sprinkle with remaining ½ cup cheese and the basil.

Mostly because it is so easy and there really isn’t a whole lot of work to it. The most recent dish that I have tried in the slow cooker are Buffalo Chicken Sandwiches. They were really easy to make and the kids adored them, meaning they weren’t too spicy for them.
